You know when you are thinking about how two things would go great together? Like, say… for example, me and John Stamos.
Well I was thinking of what I could put in my hot amaranth cereal today, and the thought came to me: dried tart cherries.
It was great because I used to sweeten my cereal with a bit of maple syrup, but now, with the cherries thrown in during cook time, they sweeten it to perfection. As many of you know, added sugar all the time can lead to metabolic dysfunction and ultimately cancer.

Stand Up 2 Cancer has a “Dream Team” of scientists looking at the relationship between sugar and cancer. The lead scientist in a recent interview simply said “Sugar scares me”. That’s added sugar…as in cakes, cookies, and any other “sweetened” foods that have “sugar” on the ingredient list. This does not apply to fruit which when eaten whole is broken down with a sufficient amount of fiber to allow the sugar to be metabolized slowly in a healthy way. A good reason to eat your peels and skins of fruits and veggies (if edible of course).
Now for the recipe
- 1/2 cup amaranth grain (organic if possible)
- 1 1/2 cup water
- handful of tart dried cherries (or any other dried fruit you like)
- handful of walnuts, chia seeds, crushed almonds, pecans or any other add-in you want.
1. In a small sauce pot combine the amaranth grain and water over high heat and bring to a boil.
2. Add the dried fruit, cover, lower the heat and simmer for 20-25 minutes.
3. Remove from heat and throw in nuts etc.
You’ll be getting 7.5 grams of fiber, 13 grams of plant-based protein, 15% of your calcium for the day, and 41% of your iron. All that and this incredible texture! 100% plant-based and gluten -free!
This makes 2 servings. (but I ate them both…don’t tell anybody)
